A Day in the Life

A Meat Quality Assurance Manager spends their day overseeing all aspects of meat processing to ensure compliance with food safety regulations and quality standards. This involves conducting inspections, reviewing documentation, training staff, and implementing corrective actions to maintain product integrity from farm to fork.

  • Conduct daily inspections of processing lines, storage, and packaging areas for hygiene and compliance.
  • Review and approve HACCP plans, SOPs, and other quality control documentation.
  • Monitor critical control points (CCPs) and critical limits during meat processing.
  • Perform sensory evaluations and physical tests on meat products.
  • Investigate customer complaints and implement corrective and preventive actions (CAPA).
  • Train production staff on food safety, hygiene, and quality procedures.
  • Liaise with regulatory bodies (e.g., PHI, SLS) during audits and inspections.
  • Manage product recall procedures and traceability systems.
  • Maintain records of all quality checks, audits, and training sessions.
